Cucumber with Filling

Ingredients
- 1 cucumber (organic)
- 50 g cream cheese (natural, low-fat)
- 100 g light cream
- 2 dried tomatoes
- 1 Garlic clove
- 1 anchovy fillet
- 1 bunch chives
- Salt
- Pepper
- 4 tsp pistachios (chopped, for garnish)

Wash the cucumber, pat dry and peel thin strips around its circumference. Trim the ends and cut into 5 equal pieces. From one piece cut 4 sticks for garnish; with a coffee spoon hollow out the other 4 pieces on one side to about half their length, leaving a 0.5 cm rim.

Whisk cream cheese with light cream until smooth. Drain and finely chop dried tomatoes. Peel and press garlic clove. Rinse anchovy fillet, pat dry and mince. Wash 2-3 stalks of chives and cut into rings. Mix all into the cream cheese mixture and season with salt and pepper. Fill cucumber pieces, garnish with pistachios and chive stems, arrange in small bowls, and serve decorated with cucumber sticks.
