Cucumber, Tomato, Watermelon and Arugula Salad

Salad with cucumber, tomato, watermelon and arugula from Spoonsparrow: The perfect refreshment on hot summer days!

Ingredients

  • 0.5 cucumber
  • 4 large tomatoes
  • 50 g arugula (2 handfuls)
  • 40 g salted pistachios
  • 120 g Manchego cheese (1 block)
  • 80 g Black olives
  • 4 tbsp white balsamic vinegar
  • 3 tbsp olive oil
  • 1 tsp Honey
  • Salt
  • Pepper
  • 400 g watermelon flesh

Instructions

    Wash the cucumber and slice it. Wash the tomatoes, halve them, remove the stems and slice.

    Wash the arugula and spin dry. Break pistachio kernels out of their shells. Slice the cheese and break into bite-sized pieces.

    Combine olives, cucumber and tomatoes with vinegar and olive oil. Season with honey, salt and pepper and arrange in 4 deep bowls. Slice watermelon flesh. Distribute watermelon, cheese, pistachios and arugula over it and serve immediately.
