Cucumber Spiral Salad for the Thermomix

This cucumber spiral salad is ideal for a low-carb diet.

Ingredients

  • 2 cucumbers
  • 150 g cocktail tomatoes
  • 0.5 Red Onion
  • 1 Garlic clove
  • a small handful of parsley
  • 150 g Greek yogurt
  • 20 g apple cider vinegar (or red wine vinegar)
  • 25 g olive oil
  • 0.5 tsp Sugar
  • 1 tsp Dried Dill
  • Pinch of salt
  • pinch of pepper

Instructions

    Cut the cucumbers into spirals using a spiralizer or a vegetable peeler.

  2. 2.

    Halve the cocktail tomatoes and finely slice the onion.

  3. 3.

    Combine all ingredients in a bowl.

  4. 4.

    For the dressing, pulse garlic and parsley in the mixer (5 sec./speed 8).

  5. 5.

    Add the remaining ingredients and mix (20 sec./speed 4).

  6. 6.

    Pour the dressing over the salad and toss well to combine.
