Cucumber Salad with Yogurt Dressing

Ingredients
- 2 cucumbers
- 1 red chili pepper
- 150 g yogurt
- 1 tbsp Rapeseed Oil
- 2 tbsp white balsamic vinegar
- 2 tbsp lemon juice
- Salt
- Pepper
- 1 pinch sugar
- 1 handful sprouts (e.g., radish, beetroot)
Instructions

Wash the cucumbers, peel them and slice lengthwise into thin rounds. Wash the chili, halve it lengthwise and remove the seeds. Dice the flesh as finely as possible. Whisk the yogurt with oil, vinegar and lemon juice until smooth. If desired, stir in 2–3 tbsp cold water.

Add the chili cubes and season the dressing with salt, pepper and sugar. Mix in the cucumbers and arrange on plates. Rinse the sprouts, drain them and scatter over the salad. Sprinkle fresh pepper over the cucumber salad with yogurt dressing and serve.
