Cucumber Meatballs

Ingredients
- 300 g mixed ground meat
- 0.5 onion
- 20 g butter
- 0.5 stale roll
- 1 egg
- Salt
- Pepper
- 3 Tbsp plant oil
- 750 g stewed cucumber
- 1 onion
- 1 Garlic clove
- 2 tbsp oil
- 0.5 lemon
- 2 tbsp mustard
- 200 g whipping cream
- 2 tbsp chopped parsley
- 1 packet mashed potato powder

Peel and finely chop the onion, sauté in butter. Soak the roll in hot water, squeeze out excess liquid and mix with onion, salt, pepper, and ground meat. Shape small meatballs with damp hands and fry in hot oil for 6 minutes on each side.

For the vegetables peel the cucumbers, scoop out seeds with a spoon, and slice halves into thin rounds. Peel and finely chop onion and garlic, sauté in oil. Juice lemon with cucumber, salt, mustard, and half the cream; bring to a boil. Simmer gently for 5 minutes until tender, gradually stirring in remaining cream. Prepare mashed potatoes according to packet instructions. Serve meatballs with stewed vegetables and mashed potatoes, sprinkled with parsley.
