Crispy Tofu

Ingredients
- 350 g tofu
- Salt
- Pepper (freshly ground)
- 1 tbsp flour
- 1 egg
- 60 g breadcrumbs
- vegetable oil (for frying)
- 2 cm ginger
- 1 small piece daikon radish (~30 g)
- 4 tbsp soy sauce
- 2 tbsp chives rings
- 1 tsp wasabi paste
- 4 coriander leaves

Cut the tofu into 4 roughly equal cubes. Season with salt and pepper, then coat in flour. Whisk the egg and toss the cubes in it. Coat with panko breadcrumbs and fry in hot oil (≈170 °C) for 4‑5 minutes until golden brown; drain on paper towels.

Peel and finely grate the ginger and daikon radish.

Place the tofu cubes in small bowls with a splash of soy sauce, sprinkle chives over them, then top each with a bit of grated daikon, ginger, and wasabi. Garnish with coriander leaves before serving.
