Crispy scampi burger with avocado – this recipe by renowned chef Christian Henze is one you shouldn’t miss!

Ingredients

  • 350 g raw scampi or large shrimp (peeled)
  • 1 tbsp Crème fraîche
  • 1 tbsp breadcrumbs
  • 1 egg
  • Sea salt
  • freshly ground black pepper
  • 1 tbsp butter
  • 1 tbsp good olive oil
  • 1 ripe Avocado
  • 1 fresh red chili pepper
  • 0.5 lemon (juice)
  • Salt
  • black pepper (freshly ground)
  • a touch of sugar
  • 4 crisp small sandwich or baguette rolls

Instructions

    Clean the scampi or shrimp: cut a slit along the back with a sharp knife and remove the vein. Rinse under running water and pat dry on paper towels. Then finely chop with a sharp knife and place in a bowl.

    Add the crème fraîche, breadcrumbs, and egg to the bowl and knead everything together. Season with sea salt and freshly ground pepper. With wet hands shape 4 flat patties from the mixture.

    Heat butter and olive oil in a pan. Cook the scampi patties on both sides until golden‑brown and cooked through.

    Prepare avocado salsa: cut the avocado lengthwise, remove the pit and peel. Dice the flesh into small cubes and place in a bowl. Drizzle with lemon juice and gently mix with a spoon.

    Halve the chili pepper lengthwise, remove seeds and trim the stem end. Finely dice the chili and add to the avocado. Season the salsa with salt, freshly ground pepper, and a pinch of sugar.

    Assemble the burger: cut the rolls horizontally but do not split all the way through. Spoon 1 tbsp of avocado salsa onto each bottom half, place one scampi patty on top, and lightly press the upper halves down.
