Crispy Chicken
Crispy chicken is prepared in no time and tastes good for young and old!
Ingredients
- 3 untreated lemons
- olive oil (for the pan)
- 1 tbsp liquid butter
- 1 tbsp Olive Oil
- 1 chicken (ca. 1.2 kg)
- a handful thyme
- 3 fresh bay leaves
- Salt
- pepper (ground)
- 3 shallots
- 4 purple garlic cloves
Instructions

Preheat the oven to 180°C with upper and lower heat.

Wash lemons hot and dry them. Cut two in half and place in the oiled roasting pan. Squeeze out the third and mix its juice with warm liquid butter and oil.

Pat the chicken dry and rinse thyme, shake it dry, then fill about half of the chicken with 2 bay leaves. Tie the chicken with kitchen twine and rub all over with salt and pepper.

Place the chicken breast-side up in the pan. Add the shallots and garlic, along with remaining herbs.

Brush the chicken with lemon butter and roast for about 1.5 hours, basting occasionally with more lemon butter and drizzling with released juices. In the last 15 minutes, turn on the grill to crisp the skin. Remove the twine before serving.
