Ingredients

  • 300 g starchy potatoes
  • 1 onion
  • 1 Garlic clove
  • 200 g Yellow lentils
  • 1 tbsp green curry paste
  • 800 ml vegetable broth
  • Salt
  • Pepper (freshly ground)
  • 100 ml Soy drink (Soy milk)
  • 2 tbsp freshly chopped parsley

Instructions

    Peel the potatoes and dice them into small cubes. Peel and finely chop the onion and garlic.

    Heat oil in a pot and sauté the onion with the garlic until translucent. Add the potatoes and lentils, stir in the curry paste, then pour in the broth. Season with salt and pepper and simmer over medium heat for about 30 minutes. Pour in the soy milk, simmer for another 5 minutes, fold in parsley, adjust seasoning, and serve in cups.
