- 8 garlic cloves
- 4 Spring Onions
- 3 tbsp butter
- 2 tbsp flour
- 800 ml beef broth
- 1 slice rye bread
- 100 g Sour cream
- Lemon juice
- Salt
- Pepper

Peel the onion and garlic; finely dice the onion and halve the garlic. Wash, trim, and cut the spring onions into rings. Set aside the green rings.

Sauté the onion in 2 tbsp hot butter. Add the white spring onion rings and garlic, then sprinkle with flour. Deglaze with beef broth and simmer gently for about 15 minutes, stirring occasionally.

Meanwhile, remove crust from the bread, cube it, and crisp it golden brown in the remaining butter. Stir sour cream into the soup and blend until smooth. Season with lemon juice, salt, pepper, and nutmeg, then ladle onto plates. Garnish with spring onion greens and toasted bread cubes before serving.
