Creamy Cauliflower Soup with Kohlrabi

This creamy cauliflower soup with kohlrabi is super easy to prepare and very healthy.

Ingredients

  • 400 g cauliflower (0.5 head of cauliflower)
  • 200 g small kohlrabi (1 small kohlrabi)
  • 5 g chives (0.25 bunch)
  • 500 ml vegetable broth
  • 250 ml soy cream
  • Salt
  • Pepper
  • nutmeg
  • 1 splash Lemon juice

Instructions

    Wash, trim and cut the cauliflower into florets and slice into thin pieces.

    Peel the kohlrabi and cut it into small pieces; set aside some green kohlrabi for garnish. Wash and dry the chives.

    Heat the broth in a pot. Cook the vegetables covered over low to medium heat for about 25 minutes.

    Remove a few cauliflower slices from the soup as a filling. Puree the soup finely, add the soy cream and puree again briefly. Return the cauliflower slices to the soup and warm them through.

    Season the soup with salt, pepper, freshly grated nutmeg and lemon juice, then serve in four bowls. Garnish with chives and the reserved green kohlrabi.
