Ingredients

  • 700 g carrots
  • 2 vegetable onions
  • 2 sprigs thyme
  • 1 sprig parsley
  • 1 sprig basil
  • 2 tbsp olive oil
  • 1 l vegetable broth
  • Salt
  • Pepper
  • 1 tsp agave syrup

Instructions

    Peel the carrots and onions and dice them into small cubes. Wash the herbs, shake dry, pluck leaves from stems and finely chop.

    Heat olive oil in a pot and sauté the onion cubes until translucent. Add carrot cubes, stir briefly, pour in broth, bring to a boil, then simmer over medium heat for 20–25 minutes.

    Blend with an immersion blender until smooth; add more liquid if needed and season with salt, pepper, and agave syrup. Ladle the creamy carrot soup into preheated bowls and garnish with chopped herbs before serving.
