Creamy Broccoli Cheese Sauce

The creamy cheese sauce with broccoli from Spoonsparrow is quick to prepare and a booster for your immune system.
Ingredients
- 600 g Broccoli
- 600 ml Vegetable Broth
- 1 onion
- 1 tbsp butter
- Salt
- 100 g herb cream cheese
- 50 g freshly grated Parmesan
- Pepper

Clean and wash the broccoli, cut into small florets, peel and dice the stem. Cook the broccoli florets in the broth for 4 minutes. Then drain and reserve the broth.

Next, peel and finely dice the onion, sauté with the broccoli florets in melted butter, deglaze with 500 ml of the reserved broth, cover and cook for 8 minutes.

Afterwards puree the broccoli in the broth. Stir in the cream cheese and 30 g grated Parmesan, add the broccoli stems back, bring to a boil again. Season with salt and pepper, garnish with coarsely ground pepper and the remaining Parmesan. This sauce pairs especially well with wide noodles.
