Cream Cheese Strawberry Cake
Light dessert: Cream cheese strawberry cake is perfect for gifting, bringing along and snacking.
Ingredients
- 300 g butter cookies
- 30 g sugar
- 75 g softened butter
- 300 g Strawberries
- 1 tbsp Lemon Juice
- 2 tbsp powdered sugar
- 12 sheets red gelatin
- 700 g cream cheese (pure)
- 150 g sugar
- 200 ml whipping cream (at least 30% fat content)
- 150 ml whipping cream (at least 30% fat content)
- 1 packet vanilla sugar

Grind the cookies in a mixer and knead with butter and sugar. Line the bottom of a springform pan with parchment paper and spread the cookie mixture evenly on it. Chill for about an hour.

Meanwhile, rinse, wash, trim and chop the strawberries. Blend with lemon juice and powdered sugar until smooth. Set aside 3 tbsp of the puree. Soak 10 sheets of gelatin in cold water. Mix cream cheese with strawberry puree and sugar. Squeeze out excess water from the gelatin, warm it gently in a pot until dissolved. Add 2 tbsp of the cream cheese mixture to the gelatin, stir, then combine with the remaining cream cheese mixture. Whisk smoothly. Beat the whipping cream stiffly and fold into the mixture.

Spread the mixture over the cake base. Soak the remaining gelatin in cold water, melt it gently in a pot until liquid, mix with strawberry puree, and spread evenly on top of the cake. Chill for at least 3 hours. Beat the remaining whipping cream with vanilla sugar stiffly and pipe onto the cake using a star tip. Remove the springform ring from the cake and serve decorated with whipped cream sprinkles.
