Ingredients

  • 300 ml Vegetable broth
  • 1 tsp ground turmeric
  • 1 pinch Cinnamon powder
  • 150 g instant couscous
  • 10 sprigs thyme
  • 2 Zucchini
  • 1 eggplant
  • 2 red onions
  • 2 red bell peppers
  • 1 tbsp Olive Oil
  • Salt
  • Pepper

Instructions

    Bring the broth with turmeric and cinnamon to a boil. Pour over the couscous and let it absorb for about 10 minutes.

    Meanwhile rinse the thyme, shake dry, remove half of the leaves and chop. Peel and wash the zucchini and eggplant; slice or julienne the zucchini and dice the eggplant. Peel, halve, and cut the onions into strips. Clean, wash, and cube the bell peppers.

    Heat olive oil in a large pan. Sauté the onions and eggplant for about 5 minutes while stirring. Add the peppers, zucchini, and chopped thyme; cook together for 2-3 minutes until tender with bite.

    Finally stir in the couscous, season with salt and pepper, and serve on plates garnished with remaining thyme.
