Couscous with Scallions and Spicy Tofu

Couscous with scallions and spicy tofu from Spoonsparrow is a tasty and filling lunch or dinner.

Ingredients

  • 1 small onion
  • 1 Garlic clove
  • 4 tbsp sesame oil
  • 1 tbsp curry powder
  • Salt
  • Pepper
  • 400 g Tofu
  • 300 g carrots
  • 2 Spring Onions
  • 2 stalks coriander
  • 400 g whole grain couscous (instant)

Instructions

    Peel the onion and garlic, then blend them with 3 tbsp sesame oil, curry powder, salt, and pepper until smooth. Cut the tofu into cubes, marinate in the mixture, and let it sit for at least 30 minutes.

    Meanwhile peel the carrots and slice them. Trim the spring onions and cut them diagonally into wide rings. Blanch both in boiling salted water for 1–2 minutes, drain, and shock with cold water.

    Wash the coriander, shake dry, and pick off some smaller leaves. Heat the remaining oil in a pan and fry the marinated tofu until golden brown on all sides. Pour 400 ml of boiling salted water over the couscous, let it absorb for 5 minutes, then fluff with a fork.

    Plate the couscous with scallions and spicy tofu on bowls and sprinkle with coriander.
