Couscous Pan with Vegetables

Colorful, delicious and super healthy – the couscous pan with vegetables from Spoonsparrow!

Ingredients

  • 500 g broccoli
  • 400 g Bell peppers (2 bell peppers)
  • 200 g carrots (2 carrots)
  • 2 cloves garlic
  • 4 tbsp Vegetable oil
  • 150 g peas (frozen)
  • 1 tbsp Garam Masala
  • 2 tsp Chili paste
  • Salt
  • Pepper
  • 400 ml Vegetable broth
  • 200 g Couscous
  • 4 Scallions

Instructions

    Wash and clean the broccoli. Cut off the thick stem, peel it and cut it into 1 cm cubes. Divide the remaining broccoli into florets.

    Quarter the peppers, remove the seeds, wash and chop them finely. Wash, peel and finely dice the carrot. Peel and chop the garlic.

    Heat the oil in a pan and sauté the broccoli, peppers, carrots and garlic over medium heat for 4-5 minutes. Add peas, Garam Masala and chili paste and simmer briefly. Season with salt and pepper. Pour in the broth and let it simmer for 1 minute.

    Add couscous and stir. Remove the pot from the heat and let it swell covered for 5 minutes.

    Serve the couscous pan with vegetables on a plate and sprinkle with scallions.
