  • 30 g pine nuts (2 tbsp)
  • 100 g cherry tomatoes
  • 40 g black olives (pitted)
  • 1 Avocado
  • 0.5 bunch basil (10 g)
  • 600 g cottage cheese
  • Salt
  • Pepper
  • 1 tbsp Lemon Juice

Instructions

    Toast pine nuts in a hot pan without fat over medium heat for 3 minutes. Wash and halve the tomatoes. Drain the olives, let them drain, and slice them into rings. Pit the avocado, scoop out the flesh, and dice it. Wash, dry, shake off some basil leaves, set a few aside, and chop the rest into strips.

    Mix cottage cheese with salt, pepper, tomatoes, olives, avocado, basil, and lemon juice. Spread on bowls, sprinkle with pine nuts, and garnish with basil.
