Ingredients
- 4 fresh corn cobs
- 1 tbsp sugar
- butter
- Salt
- Pepper
- 2 corn cobs
- 2 egg yolks
- 1 Egg white
- 3 tbsp Flour
- Salt
- Pepper
- oil for frying

Wash the corn and cook in plenty of sugary water covered for 8 minutes. Remove with a slotted spoon, drain, and top with butter flakes, salt, and pepper.

Wash the corn and scrape kernels off the cob with a sharp knife. Mix the kernels with egg yolks and season with salt and pepper. Whip the egg white until stiff, fold in, then sprinkle flour over it. Mix lightly. Heat oil in a pan and spoon the corn mixture into the fat, flattening slightly. Fry the fritters for 2 minutes on each side, remove with a slotted spoon, and drain on paper towels.
