Coriander Sea Bream in Indian Style

Ingredients
- 1.2 kg large sea bream (1 large sea bream)
- 2 Organic Limes
- 1 Organic lemon
- 1 small onion (finely diced)
- 1 garlic clove (minced)
- Salt
- black pepper (cracked)
- 2 bunches coriander
- 1 Green Chili Pepper
- 3 Tbsp plant oil
Instructions

Wash the fish, pat dry and make 3-4 diagonal slashes on each side with a sharp knife.

Grate zest from one lime and one lemon finely, then squeeze out juice from all fruits. Mix juice and zest, and season the inside and outside of the fish with 2 tbsp juice, salt, and pepper.

Wash the coriander, shake dry, set aside some leaves for garnish, combine the rest with the chili, remaining citrus juice, and oil in a blender and pulse until finely chopped. Fold in onion and garlic.

Spread the herb paste inside and outside the fish, lightly re‑pepper, and refrigerate for 2 hours.

Place the fish in a baking dish and bake in a preheated oven at 200°C (400°F) for 15–20 minutes.

Plate the fish and garnish with lemon wedges and coriander before serving.

Serve with rice or potatoes.
