Cordon Bleu with Fried Potatoes

Ingredients
- 800 g pork schnitzels (4 pieces; about 2 cm thick)
- 4 slices raclette cheese
- 4 slices cooked ham
- Salt
- black pepper (freshly ground)
- 2 Eggs
- 2 tbsp flour
- 8 tbsp breadcrumbs
- 4 tbsp oil
- 3 tbsp butter
- 500 g boiled, peeled potatoes (from the day before)
- 2 tbsp chopped parsley
- paprika powder

Slice a pocket into each schnitzel with a sharp knife. Place one slice of cheese and ham in each pocket, secure with toothpicks, and season with salt and pepper. Beat the eggs in a shallow dish. Spread flour on one plate and breadcrumbs on another. Dredge the meat first in flour, then in egg, and finally in breadcrumbs.

Heat oil and butter in a pan and brown the schnitzels on each side over medium heat.

Meanwhile, slice potatoes and fry them in a large pan with hot butter until golden brown, seasoning with salt, pepper, and paprika.
