Ingredients

  • 4 eggs
  • 140 g sugar
  • 1 pinch salt
  • 100 g flour
  • 40 g starch
  • 150 g jam (your choice)
  • 150 g dark chocolate couverture

Instructions

    Preheat the oven to 180°C fan‑forced.

    Separate the eggs. Beat the yolks with half the sugar until fluffy. Whisk the whites with a pinch of salt, gradually adding the remaining sugar and beating until glossy peaks form. Fold the meringue into the yolk mixture, then sift in the flour and starch, mixing gently until combined.

    Fill a piping bag fitted with a small round tip and pipe strips (about 6 cm long) onto parchment paper on a baking sheet. Bake for about 10 minutes in the preheated oven.

    Remove from the oven, lift off the sheet and let cool completely.

    Warm the jam slightly. Roughly chop the chocolate and melt it over a hot but not boiling water bath, then remove from heat and allow to cool to lukewarm. Spread the jam on one side of half the cookies, top with another cookie, press lightly, then dip the edge diagonally into the melted chocolate. Let excess drip off and dry before serving.
