Ingredients

  • 1 lemon
  • 1 kg apples
  • 100 ml dry white wine
  • 150 g sugar
  • 4 cloves
  • 1 cinnamon stick

    Squeeze the juice of the lemon into a bowl with water. Peel, quarter, and core the apples. Immediately place them in the lemon water. Once all apples are prepared, blanch them together for about 1 minute in boiling water. Then shock, drain well, and fill the prepared (cooked) jars.

    Bring 400 ml water with wine, sugar, cloves, and broken cinnamon pieces to a boil. When the sugar has dissolved, pour the syrup over the apple quarters until about 1 cm below the jar rim. Clean the rims and seal tightly (with a canning ring and lid). Place the jars on a dishcloth (to prevent rattling) at the bottom of a tall pot and fill with water until the jars are well covered. Slowly heat to constant 90°C (use a canning thermometer) and simmer for about 30 minutes. Afterward, turn off the stove and carefully lift the jars from the water after about 10 minutes. Place on a dishcloth and let cool.
