Cold Strawberry Cucumber Soup (Gazpacho)

Ingredients
- 100 g watermelon
- 300 g Strawberries
- 0.5 cucumber
- 1 onion
- 300 g plain yogurt (3.8% fat)
- 0.5 organic lemon (juice)
- Salt
- ground pepper
- 1 tsp Honey
- mint (for garnish)
Instructions

Remove seeds from the watermelon and dice the flesh.

Wash, clean, slice strawberries into halves and set aside 4 tbsp.

Peel and cube the cucumber. Peel and chop the onion. Wash the lemon, dry it, grate the zest and squeeze out the juice.

Blend fruit with vegetables, lemon juice and yogurt until smooth; season with salt, pepper, lemon zest and honey. Chill for at least one hour. Serve in glasses topped with remaining strawberries and mint.
