Cold Melon Soup with Mint

The cold melon soup with mint from Spoonsparrow is refreshing, fruity and perfect for summer!

Ingredients

  • 1 melon (e.g., cantaloupe or charentais)
  • 1 Lime (juice)
  • 1 Orange (juice)
  • 1 tbsp honey
  • 100 ml peach juice
  • chopped mint (for garnish)

Instructions

    Halve the melon, remove seeds and use a melon baller to scoop about 150 g of small balls from the flesh. Separate the remaining flesh from the rind, cut into large pieces, and place in a bowl. Add lime and orange juice, then honey. Finally pour in peach juice. Blend finely, adding a little water if needed.

    Add the melon balls to the soup and chill for at least 2 hours before serving.

    Serve garnished with mint.
