Cold Melon Soup

Ingredients
- 0.5 small watermelon
- 2 bell peppers (yellow)
- 0.5 cucumber
- 1 Red Onion
- 2 tbsp chopped basil
- 400 ml vegetable broth (glass)
- 100 ml White wine
- Pepper
- chili powder
Instructions

Wash the watermelon, cut into 1.5 cm thick slices, remove rind and seeds. Dice the flesh.

Wash, trim, halve, deseed the peppers, peel off the white skin and cut ¼ into long thin strips, dice the rest into 1–1.5 cm cubes. Peel and dice the cucumber. Peel, halve and finely dice the onions.

Combine all ingredients, add vegetable broth, pour in white wine, season with pepper and chili powder, taste and refrigerate for at least 1 hour. Garnish with pepper strips and basil.

Serve with sour cream or unsweetened whipped cream as desired.
