Cod on Portuguese Style

Ingredients
- 5 cooked potatoes (ca. 600 g)
- 2 onions
- 4 cod fillets (skinless at 150 g each)
- olive oil (for greasing the dish)
- 1 Garlic clove
- 1 red bell pepper
- 60 g green olives (pitted)
- 4 tomatoes
- Salt
- Pepper (freshly ground)
- 100 ml dry white wine
- 30 ml olive oil

Peel and slice the potatoes. Peel the onions and cut them lengthwise into thin strips. Rinse the cod fillets and pat them dry with paper towels. Grease a baking dish with olive oil. Peel, chop, and scatter the garlic in the dish. Layer the sliced potatoes on top. Wash, halve, deseed, and dice the bell pepper; slice the olives. Wash and slice the tomatoes.

Preheat the oven to 200 °C (Oven + fan).

Spread the tomato slices over the potatoes, season with salt and pepper. Place the fish fillets on top, season again, and sprinkle with onion, bell pepper, and olives. Pour the white wine over the dish and drizzle the remaining olive oil. Bake in the oven for about 20 minutes until cooked through.
