Cod fritters with salsa

Ingredients
- 100 g toast bread
- 250 ml hot milk
- 2 shallots (chopped)
- 50 g butter
- 700 g cod fillet
- 3 eggs
- 1 tbsp dill (chopped)
- 2 tbsp parsley (chopped)
- salt (pepper)
- oil (for frying)
- aioli
- 4 egg yolks
- 1 tsp balsamic vinegar
- 1 tbsp Lemon Juice
- 0.5 tsp mustard
- 8 garlic cloves
- salt (pepper)
- 1 tsp ketchup
- 0.25 l vegetable oil
- 2 Tomatoes
- 1 Red Onion
- 1 small cucumber
- 2 tbsp lemon juice
- 1 tbsp Olive Oil
- Salt
- pepper (ground)
Instructions

Sauté shallots in a little oil until translucent.

Soak toast bread in hot milk, squeeze out excess and blend with shallots, cod fillet, eggs, herbs, salt and pepper to form a batter.

Shape the mixture into patties and fry until golden brown.

Peel and crush garlic cloves. Mix egg yolks, mustard, vinegar, lemon juice, ketchup, salt and pepper; drizzle oil in a thin stream while stirring.

Quarter tomatoes, remove seeds and dice them.

Dice onion finely.

Wash cucumber, halve lengthwise, remove seeds and dice it as well.

Combine lemon juice with salt, pepper and oil, then mix with the vegetable cubes.

Plate the cod fritters with aioli and tomato salsa on each plate and serve.
