Cod Fillet with Spinach

Ingredients
- 4 cod fillets (160 g each)
- 2 untreated lemons (zest and juice, preferably organic)
- 600 g fresh spinach
- 300 g green beans
- 4 small canned corn kernels
- Salt
- Pepper (freshly ground)
- cold‑pressed olive oil

Wash the cod fillets, pat dry and drizzle with 4 tbsp lemon juice.

Wash and trim the spinach; in a large pot add 2 tbsp oil over medium heat and wilt. Season with salt and pepper.

Trim and wash the beans; blanch in plenty of salted water for about 8 minutes. Drain. Drain the corn kernels as well.

Add some water with the remaining lemon juice to a steamer basket. Place the fish in the steamer, cover, and steam over medium heat for about 8 minutes until cooked through. Season with salt and pepper.

Arrange the fillets on plates alongside beans, spinach, and a corn kernel. Drizzle each with 2 tbsp oil and sprinkle with lemon zest. Serve immediately with fresh crisp white bread.
