Cod Fillet with Artichokes

The cod fillet with artichokes from Spoonsparrow is elegant and also well received by guests.

Ingredients

  • 1 Red Onion
  • 2 Garlic cloves
  • 2 green zucchinis
  • 2 yellow zucchinis
  • 4 tbsp olive oil
  • 10 g parsley (0.5 bunch)
  • 1 Organic lemon
  • 600 g cod fillet
  • 4 artichoke hearts (canned)
  • 30 g black olives (pitted)
  • Salt
  • Pepper

Instructions

    Peel the onion and cut into thin slivers. Peel the garlic and finely chop. Wash the zucchinis, trim them, and slice into rounds. Rinse the parsley, pat dry, chiffonade the leaves; set aside half.

    Heat 1 tbsp oil in a pan. Sauté the onion slices for 2 minutes over medium heat. Add the zucchini rounds and cook for 3 more minutes. Add the garlic and the reserved parsley, cooking for another 2 minutes.
