Ingredients

  • 600 g cod fillet
  • 1 tbsp Lemon Juice
  • 800 g potatoes
  • Salt
  • 100 ml fish stock
  • 250 g mascarpone
  • 2 Eggs
  • 2 tbsp starch
  • a pinch ground cumin
  • Pepper
  • 2 tbsp butter (for the ramekins)

    Preheat the oven to 180°C.

    Cut the cod fillets into cubes and mix with lemon juice. Peel the potatoes, cut them into small cubes and cook in plenty of salted water for 25 minutes. Drain and let cool. Take one‑third of the potatoes into a bowl and mash. Heat the fish stock and stir it into the mashed potatoes. Mix the mascarpone with the eggs and starch. Season with cumin and pepper. Combine the potatoes and cod cubes, then mix everything in four buttered ramekins. Bake for about 30 minutes.
