Ingredients

  • 1 tbsp Olive Oil
  • 1 kg Brussels sprouts
  • Salt
  • 4 tomatoes
  • 600 g cod fillet
  • black pepper (freshly ground)
  • Lemon juice
  • 250 ml heavy cream
  • 3 eggs
  • 100 g grated cheese (e.g., Emmental)
  • 1 tbsp freshly chopped parsley

Instructions

    Preheat the oven to 180°C fan‑fry. Brush a baking dish with oil.

    Clean the Brussels sprouts, cut crosswise at the stem, and blanch in salted water for about 5 minutes. Shock in cold water and drain. Wash the tomatoes, quarter them, remove seeds, and place them with the sprouts in the dish. Rinse the cod, pat dry, and arrange over the vegetables. Season with salt, pepper, and drizzle lemon juice.

    Whisk together the cream, eggs, and cheese; season with salt and pepper. Pour over the vegetables. Bake for about 30 minutes until golden brown. Sprinkle parsley on top and serve.
