Coconut Sago Soup

Ingredients
- 80 g pearl sago
- 250 g sweet potatoes
- 250 g yams
- 60 g brown sugar
- 2 pandan leaves
- 200 ml coconut milk

Place the sago in a bowl, cover with hot water and soak for about 10 minutes.

Peel and wash the sweet potatoes and yams, cut into large pieces. Place them in a steamer basket, sprinkle with 1 tsp sugar, and steam over boiling water covered for about 20 minutes until tender.

Bring 800 ml water with the remaining sugar to a boil. Tie the pandan leaves together and add them to the water. Reduce heat, stir in drained sago and coconut milk. Simmer gently for 15-20 minutes, stirring occasionally, until the pearls become translucent.

Remove the pandan leaves from the soup, add the sweet potato and yam pieces, and sweeten further if desired.

Serve hot or chilled in bowls.
