Coconut Rice in Papaya

- 1 small coconut
- 100 g long-grain wild rice mix
- Salt
- 75 g smoked turkey breast fillet
- 3 spring onions
- 2 papayas
- 3 tbsp raspberry vinegar
- Salt

- 1 tsp sugar
- 4 tbsp grape seed oil

Pierce the "eyes" of the coconut with a nail, let the coconut water flow out and catch it. Place the coconut in a 200°C oven for 20 minutes. Remove the husk, tap off the remaining flesh.

Peel and grate the brown part of 100 g coconut meat. Cook with the long-grain wild rice mix in boiling salted water for 20 minutes. Slice turkey breast into strips. Trim, wash and cut spring onions into rings. Halve papayas, remove seeds, scoop out flesh with a spoon and dice. Mix raspberry vinegar with 2 tbsp coconut water, sugar, salt and pepper; gradually whisk in oil.

Drain the rice, let it cool slightly, then combine with turkey breast, spring onions and papaya cubes. Pour the dressing over and fill the papaya halves. Use a potato peeler to shave small pieces of coconut and sprinkle over the papayas.
