Cloud Cake with Strawberries

Ingredients
- 5 eggs
- 250 g butter
- 250 g sugar
- 1 tsp Baking powder
- 75 ground almonds
- 3 tbsp cocoa powder
- 200 g Flour
- 150 g powdered sugar
- butter (for the pan)
- 2 tbsp strawberry jam
- 40 g chopped almonds
- 400 g Strawberries
- 300 ml whipping cream
- 1 Tbsp vanilla sugar
- 1 packet whipped cream stabilizer
- powdered sugar (for dusting)

Preheat the oven to 180°C fan. Grease a springform pan with butter.

Separate the eggs. Beat the butter and sugar until fluffy. Gradually fold in the yolks. Mix in baking powder, almonds, cocoa powder, and flour. Whisk the egg whites with powdered sugar until stiff peaks form; fold half into the batter and pour into the prepared pan. Smooth the surface and bake for about 40 minutes. When the base is done, spread the remaining meringue loosely on top and brown under the grill for a few minutes. Remove from oven and release from the pan. Spread warm jam around, sprinkle almond flakes, cut diagonally, and let cool.

Wash, trim, and pat dry the strawberries. Whip the cream with vanilla sugar and stabilizer until stiff; spread half over the cake base. Arrange strawberries on top and drizzle remaining cream. Place the cake cover on top and dust with powdered sugar before serving.
