Classic Green Bean Stew

Green bean stew by Spoonsparrow – the perfect soul warmer for cold days!

Ingredients

  • 250 g dried white beans
  • 1.5 l water
  • 200 g Green beans
  • 2 beef tomatoes
  • 2 onions
  • 2 Garlic cloves
  • 3 stalks celery
  • 4 tbsp olive oil (40 ml)
  • Salt
  • Pepper
  • 1 bunch basil (20 g)

Instructions

    Soak the white beans overnight in water, then cook them in a pot with boiling water for about 1½ hours until tender. Peel and halve the onions, slicing them into thin rings; finely chop the garlic. Wash and dry the celery, cutting it into pieces. Trim the ends of the green beans and cut them into large chunks. Wash, dry, and dice the tomatoes.

    Heat olive oil in a large pot. Sauté the onions and garlic over medium heat. Add the beans, tomatoes, celery, and drained white beans, browning briefly. Season well with salt and pepper. Pour in ½ l of cooking liquid, cover, and simmer on low for 15 minutes.

    Wash the basil, shake off excess water, and tear the leaves from the stems. Keep a few to sprinkle on top, and mix the rest into the stew, letting it bubble for another 5 minutes. Adjust seasoning if needed and garnish with basil leaves.
