Christmas Turkey Roll with Star Fruit

A festive turkey roll with star fruit, fresh ingredients from the turkey category and a touch of Spoonsparrow flair.

Ingredients

  • 1 kg turkey breast fillet (cut into a roast by butcher)
  • Salt
  • black pepper (freshly ground)
  • 6 stale rolls
  • 100 ml lukewarm milk
  • 100 g dried cranberries
  • 150 ml rum
  • 50 g marzipan paste
  • 1 egg
  • 2 star fruits
  • 30 g clarified butter
  • 250 ml poultry stock

Instructions

    Preheat the oven to 200 °C with upper and lower heat. Wash, pat dry, lay out the meat, season with salt and pepper. Remove crust from rolls, slice into rounds, place in a bowl and pour over lukewarm milk. Soak cranberries in rum. Grate marzipan finely and mix with egg; add to rolls. Knead all together, lightly season, then fold in drained cranberries. Spread the mixture evenly on the meat and center the star fruit.

    Roll the roast tightly and secure with kitchen twine. In a roasting pan melt clarified butter and brown the roll all around until golden brown. Roast in the preheated oven for 1 ½ hours, gradually pouring poultry stock over it. Remove the finished roast, untie the twine, slice and arrange on a platter to serve.
