Christmas Turkey Roast

Ingredients
- 3.5 kg young turkey (about 1 young turkey)
- Salt
- black pepper (freshly ground)
- 250 g veal
- 250 g pork
- 2 onions
- 1 handful parsley
- 125 g butter
- 2 rolls
- milk (for soaking)
- 50 g ground hazelnuts
- 3 eggs
- 1 tbsp dried marjoram

Preheat the oven to 180°C with fan and top heat.

Wash and pat dry the turkey, then season inside and out with salt and pepper.

Pass the veal and pork twice through a fine meat slicer. Peel the onions, wash and shake dry the parsley, finely chop both and sauté in 50 g butter.

Soak the rolls in milk, squeeze out excess liquid, crumble into pieces and briefly sauté with the mixture. Let everything cool, then mix with the meat, hazelnuts, eggs, salt, pepper and marjoram and adjust seasoning.

Fill the turkey with the mixture and seal the opening. Roast for 2–2.5 hours on the lowest rack; occasionally baste with remaining melted butter and add water if needed. Cover loosely with foil at first and remove in the last 45 minutes.
