Christmas Roast Chicken

Ingredients

  • 1 whole chicken (pre-cooked, about 1.2 kg)
  • Sea salt
  • freshly ground pepper
  • 1 tbsp paprika powder (choose hot or sweet)
  • 4 tbsp melted butter

Instructions

    Preheat the oven to 180°C (356°F) with both fan and top heating.

    Wash the chicken thoroughly, pat dry, and clean if necessary. Season the inside with salt and pepper, then tie the joint ends together. Place the chicken breast-side up on a roasting rack over a drip tray and roast for about 60 minutes.

    For the butter seasoning, mix 1 tsp salt with paprika powder and melted butter. Brush the chicken with this mixture after about 20 minutes, then every 5-10 minutes thereafter.

    Remove the finished chicken from the oven, cut the string, and arrange it on a plate with herbs and spices. Serve with cranberry sauce if desired.
