Christmas Carpaccio with Filling

Ingredients
- 1 carpaccio (approx. 1.5 kg, ready to cook)
- 1 bunch parsley
- 2 Garlic cloves
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)

Preheat the oven to 180°C (350°F) with upper and lower heat.

Wash and pat dry the carpaccio. Remove the parsley leaves, wash, pat dry, and roughly chop. Peel and finely mince the garlic. Mix with olive oil. Brush the carpaccio inside and out with the oil mixture, season with salt and pepper. Stuff half of the parsley stems into the fish.

Place the remaining parsley stems on a sheet of parchment paper and lay the carpaccio on top. Bake in the preheated oven for about 30 minutes, brushing with the remaining oil midway. Serve nestled among the parsley leaves.

Serve with buttered potatoes if desired.
