Christmas Cake with Dried Fruits

Ingredients

  • 500 g dried figs
  • 200 g dried pears
  • 200 g dried plums (pitted)
  • 250 g nuts (hazelnuts, almonds, pine nuts)
  • 125 g liquid butter
  • 5 eggs
  • 100 g sugar
  • 200 g Flour
  • 1 tbsp cinnamon
  • 1 tsp cloves
  • fat for greasing the pan
  • 250 g powdered sugar
  • 4 tbsp Lemon juice
  • 4 tbsp chocolate shavings
  • silver sugar pearls

Instructions

    Preheat oven to 175°C fan, roughly chop nuts and cut figs, pears, and plums into small pieces. Separate eggs; beat yolks with sugar until fluffy, then add butter, flour, nuts, fruits, cinnamon, and cloves in turns, stirring into the yolk mixture. Whip egg whites stiffly and gently fold into the fruit-yolk batter. Grease and line a cake tin, pour in the dough, and smooth the surface.

    Bake for about 1 hour, remove from oven and let cool. For glaze, whisk powdered sugar with lemon juice and spread over the cake while still warm. Sprinkle chocolate shavings and silver sugar pearls before the glaze dries.
