Chocolate Strawberry Cake

Ingredients
- 200 g butter
- 130 g fruit sugar
- 4 egg yolks
- 2 tbsp rum
- 1 tsp cinnamon
- 100 g diabetic dark chocolate
- 125 g hazelnuts (ground)
- 2 tsp Baking powder
- 100 g fine oatmeal flakes
- 4 egg whites

- 200 ml whipping cream
- 1 packet stabilizer
- 0.5 Vanilla bean
- 100 g Strawberries
Instructions

Preheat the oven to 170°C fan. Grease a springform pan and line with instant flakes or parchment paper.

Cream the butter for the base. Alternately add fruit sugar and egg yolks, beating into a good froth. Stir in rum and cinnamon.

Grate the chocolate (reserve two pieces for garnish), mix with nuts, baking powder and instant flakes, then fold in.

Beat the egg whites to stiff peaks and fold into the batter.

Pour the dough into the pan and bake for 45-60 minutes until golden yellow; let rest 5 minutes in turned-off oven, then cool completely on a wire rack.

For the topping, whip the cream with stabilizer and vanilla bean seed until firm, spread over the cooled base.

Clean the strawberries, slice and arrange on the cream.

Cut remaining chocolate into shavings with a knife and scatter over the cake.

Keep the cake chilled until serving.
