Ingredients
- 2 tbsp cocoa powder
- 1 Vanilla bean
- 4 tbsp sugar
- 5 egg yolks
- 200 ml heavy cream
- 200 ml milk
- powdered sugar
- raspberries

Preheat oven to 150°C. Split the vanilla bean lengthwise and bring milk and cream to a boil with it. Sprinkle in cocoa powder and cook everything together for 10 minutes while stirring constantly. Let cool slightly, then strain. Whisk egg yolks with sugar until fluffy, then fold into the liquid. Pour the mixture into four ramekins and place them in a baking dish. Fill the dish halfway with boiling water.

Bake for 25 minutes in the oven. Cool for 2 hours, dust with powdered sugar, and briefly caramelize under the grill. Serve garnished with fresh raspberries.
