Chocolate Cookies

Ingredients

  • 200 g butter
  • 2 Eggs
  • 100 g coconut blossom sugar
  • 220 g spelt whole‑grain flour
  • 1 tsp Baking powder
  • 2 tbsp cocoa powder
  • 50 g ground hazelnuts
  • 100 g chopped dark chocolate

Instructions

    Add the butter to a pot, melt and let cool. Beat the eggs with the coconut blossom sugar until fluffy. Sift the flour with the baking powder and cocoa powder over the mixture. Fold in the melted butter, ground hazelnuts, and chocolate. Cover the dough and chill for about 1 hour.

    Using a teaspoon, scoop small portions of dough onto a parchment‑lined baking sheet, spacing them at least 1 cm apart. Flatten slightly and bake in a preheated oven at 200 °C (180 °C fan; gas level 3) for 10–15 minutes. Remove carefully from the tray and let cool.
