Chinese Cabbage Rolls with Tofu and Pecans

Ingredients

  • 1 Chinese cabbage
  • 100 g tofu
  • 1 onion
  • 200 g turkey meat
  • 4 tbsp oil
  • 4 Carrots
  • 100 g pecans
  • 0.5 L store‑bought vegetable broth
  • 0.5 bunch coriander
  • Salt
  • Pepper (freshly ground)

Instructions

    Clean the cabbage, remove outer leaves, then cut 8 large leaves and blanch in plenty of salted water for 5 minutes. Remove, shock with cold water, pat dry on a kitchen towel, and slice the stem flat. Peel, wash, and slice carrots into rounds. Spread the filling onto the cabbage leaves, fold sides over, roll like roulades, and tie with kitchen twine. Heat remaining oil in a large pot and brown the rolls all around. Add broth, cover, and simmer for 30 minutes. Before serving garnish with remaining coriander and nuts, and pour the pan sauce over.

    Peel and finely chop onion; sauté in 2 tbsp oil. Wash, pat dry, and slice turkey into thin strips; cook in oil until browned. Add carrots and steam everything together for 5 minutes, then season with salt and pepper. Rinse coriander, reserve half, finely chop the rest, and mix into the meat. Dice tofu, roughly chop nuts, and fold half of them into the tofu mixture.
