Ingredients

  • 1 l corn germ oil
  • 15 chili peppers
  • 2 tbsp cayenne pepper
  • 1 split vanilla bean

Instructions

    Finely chop the chili peppers and warm them with the oil in a pot over low heat for about 10 minutes. Let cool, then add the cayenne pepper and vanilla bean.

    Cover and let steep for one day, then strain through a sieve into a sterile container. Ideal for searing lamb or simply drizzling over toasted baguette.
