Chicory, Endive and Blood Orange Salad

Ingredients

  • 1 small endive salad
  • 1 chicory
  • 2 Blood oranges
  • 150 g yogurt
  • 2 tbsp crème fraîche
  • 3 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 tbsp capers
  • Salt
  • pepper, freshly ground

Instructions

    Wash, trim and remove the stem from the endive salad and chicory. Slice into thin strips and arrange on bowls.

    Peel the blood oranges, preferably with a sharp knife to remove the white rinds, then cut out the segments. Catch the juice and squeeze out any remaining flesh. Mix the juice with yogurt, crème fraîche, vinegar and honey. Season with salt and pepper.

    Distribute the orange segments and capers over the salad and drizzle with dressing before serving.
