Chicken Zucchini Salad with Nuts

Ingredients
- 3 zucchini
- 500 g chicken breast fillet
- Salt
- Pepper
- 4 tbsp olive oil
- 0.5 bunch mint
- 0.5 lemon
- 80 g pecan nuts

Wash, trim and slice the zucchini into thin rounds. Rinse the chicken fillets under cold water, pat dry, salt and pepper them.

Heat 2 tablespoons of oil in a pan. Cook the chicken on medium heat for about 10 minutes until golden brown all around. Reduce heat and let the chicken breast fillets finish cooking.

In another pan, heat the remaining oil. Sauté the zucchini slices over medium heat for about 4 minutes, just lightly blistering them.

Wash the mint, shake off excess water and pluck the leaves. Juice half a lemon.

Remove the chicken from the pan, drain on paper towels and slice into thin strips. Roughly chop the nuts and mix with the zucchini, chicken, mint and lemon juice. Season with salt and pepper and serve in bowls.
