Chicken with Zucchini

Spoonsparrow’s Chicken with Zucchini is delicious, healthy and lands on the plate in no time!
Ingredients
- 4 chicken breast fillets
- Salt
- freshly ground pepper
- 4 slices Gruyère cheese (42% fat)
- 4 slices raw ham
- 2 Zucchini
- 3 tbsp clarified butter
- 125 ml poultry broth

Slice the chicken breast fillets lengthwise with a sharp knife and open them like a book. Season with salt and pepper. Place one slice of cheese and one slice of ham in each fillet.

Wash the zucchini, trim the ends, and cut into 2–3 mm thick slices. Blanch the zucchini slices in boiling salted water for 30 seconds, drain, shock in ice water, dry, and pat them dry.

Wrap 2–3 zucchini slices around each fillet and secure with a toothpick or kitchen twine. Heat clarified butter in a skillet and brown the chicken fillets on both sides over medium heat. Pour in the broth, cover, and simmer for about 8–10 minutes. Serve with baguette.
