Chicken with Pineapple

Ingredients
- 350 g maccheroni
- 600 g chicken breast fillet (3 chicken breast fillets)
- 1 EL coconut oil
- 1 TL cumin
- 1 pineapple
- Salt
- 400 ml coconut cream
- 1 EL curry
- a pinch of chili peppers
- 4 EL coconut flakes
- Salt
- Pepper
- parsley (for garnish)
Instructions

Cook the pasta in plenty of boiling salted water until al dente. Cut the chicken breasts into bite‑sized pieces. Peel the pineapple, remove the core and cut into chunks, reserving the juice. Heat the coconut oil in a pan and brown the chicken pieces; add the pineapple with its juice immediately, sprinkle cumin, cover and simmer on low for 5–10 minutes.

Warm the coconut cream for the sauce, add curry, chili and coconut flakes, let it reduce slightly, then season with salt and pepper.

Drain the pasta, arrange on plates with the pineapple‑chicken mixture, garnish with parsley, and serve with the sauce in a small bowl beside.
